Easy and delicious. It is very rich and really needs a green salad with an acidic dressing to balance the meal. Such a simple dish needs the best ingredients you can afford. Another winner Nagi!

Perfectly authentic carbonara. Crispy guanciale…what a revelation (worth the effort to find it and use over bacon or speck – I got mine from Harris Farm markets)! I used (authentic) pecorino Romano in the sauce, and shaved reggiano parmigiana on top with cracked fresh black pepper. Great work Nagi and team! This one’s a keeper!!
