Absolutely love this ❤️. Although as I’m a meat guy, I diced up some chorizo and cooked that off, then added to the sauce towards the end. Amazing!!

Delicious although we didn’t have quite enough basil and I used kalamata olives. It does produce a lot of sauce for the quantity of pasta. I feel the receptor 2 would stretch to 3 but that maybe because I’m use to pasta being the hero of the dish.

This recipe got me to try anchovies for the first time, why did I wait? They’re pretty good, except their mushy consistancy, but I don’t know if I used poor quality anchovies or not. They definitely give more depth to the flavor, although it’s not bad without. Cheap protein, and they’re not fishy in the sauce at all. I expected they’d be like sardines- I gag when I get a whiff of those. I’d eat anchovies straight if they weren’t so mushy.

I eventually discovered some olives in olive oil in a small independent cafe-cum-delicatessen in Whitchurch. A small jar cost me £6!!
I now just use black olives in brine from my local supermarket. To be honest, you cannot notice the difference.
