Use a thermometer with a probe that inserts into the meat during the cook. It will tell you when temp has been reached

That’s for rare. (I like it moo-ing when I carve it.) Screaming hot oven, and I use a cast iron pan. I always have the butcher cut the bone back, lol, so it fits in the pan.
It’s only me, so while it’s an expensive treat, I can get 3, sometimes 4, meals from a decent sized steak.
